To add new material properties in blank material section

I am simulating Electrospinning device fluid flow. I want to add material properties to the polymer solution that I have kept in cylinder beside nozzle.
I want to add properties - Surface Tension, Solvent (Water)Volatility, Solution Phase transitions to the solution.
But I am not able to find theses properties in the section available.
I want to add life to my new material solution.
Please help me out.
