Condition for remeshing could not be evaluated

I'm trying to use automatic remeshing. The default expressions (for either a mesh quality condition or a distortion condition) are unknown variables. This leads to an error when I try to solve: condition for remeshing could not be evaluated. I know I can put in a custom expression, but I'd still like to understand why the defaults don't work and how to fix this.
